A 'throw everything in one pot' recipe

Add 1tbsp of the oil/bacon grease to a wide skillet or deep set pot and heat it on medium. Add chicken and cook until the outsside isn't pink anymore, then add sausage, chili powder, cumin, salt & pepper. Cook until chicken is turning brown on the edges and sausage is easily cut, then take everything out of the pot and set the meat aside on a plate. Add the rest of the oil/bacon grease to the same pot and add bell pepper, onion, and celery. Cook on medium/low for 30 min, to the point where the veggies are falling apart, then add garlic and cook for another min. Add meat back to the pot along with the rice and stir everything up. Let it sizzle for a min and then add chicken stock and bay leaves. Bring to a boil then cover and simmer for 20 min, or until all the rice is cooked through and there's not more chicken broth left. Add lemon juice, parsley, and hot sauce if you want. Then serve!

Classic BLT

Cook bacon in the nonstick skillet over medium heat, making sure to flip the slices before they start wrinkling. Transfer to paper towel and pat dry of any excess grease. Turn heat down to low, then wipe off grease from skillet using a paper towel (be careful!), and add half of the butter to the pan. Assemble sandwich (avocado first if you're using it, then bacon, tomato, lettuce, then mayo), and add to the pan on top of the butter. Put heavy bottomed pot or griddle press on top of sandwich and let cook for about 3 minutes. Take sandwich off of skillet for a bit so you can add the rest of the butter. Put the sandwich back on the skillet on the uncooked side with the pot/press on top and let it cook for another 3 min. Turn off the heat, plate, and enjoy!
